What about white asparagus?


Have you ever tried white asparagus?


We've been growing it here at Sand Hutton Asparagus for a few years now and it's certainly getting more popular!


Unlike our other varieties, which grow exposed to the sun, our white asparagus is kept undercover until it's ready to harvest. This prevents the chlorophyll production, stopping the green colour from developing.


How does it taste?


While green asparagus has a more earthy flavour, white asparagus is known for its sweeter, more delicate flavor, often described as having a mild, slightly bitter taste with a hint of sweetness.

   

White asparagus is also generally thicker and more fibrous than green asparagus, so it's often peeled before eating. 


How to eat it?


There are plenty of ways to enjoy white asparagus, but recently, we've been enjoying it very simply, baked in a paper parcel with brown butter, which helps retain all the natural flavours.
